Saudi Marqouq

Saudi Arabian marqouq is a stew made with meat (usually lamb or chicken), vegetables, and spices. The stew is simmered until the meat is tender and the vegetables are soft then poured on flatbread.

Equipment

1 pressure cooker

Ingredients  

  • 1 chicken (skinless boneless, cut in 6 parts)
  • 4 marqouq bread (cut into bite-sized pieces)

Vegetables:

  • 1 small onion (chopped)
  • 1 medium tomato (half chopped and half diced)
  • 2 medium carrots (peeled and diced)
  • 2 medium zucchini (peeled and diced)
  • 2 small eggplants (peeled and diced)
  • 1 medium squash (peeled and diced)

Spices:

  • 2 teaspoons mixed spices
  • 1 teaspoon salt (to taste)
  • 2 pieces black lemons (loomi)
  • 2 bay leaves

Instructions

  • Heat the oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes. Add the tomato, spices, and bay leaves and cook for 1 minute more.
  • Add the chicken and cook until browned on all sides, about 10 minutes.
  • Add the vegetables and stir to combine. Pour in enough water to cover the ingredients by about 1 inch. Bring to a boil, then reduce heat to low and simmer for 15 minutes, or until the chicken is cooked through and the vegetables are tender.
  • Stir in the flatbread pieces and simmer for 10 minutes more, or until the flatbread is softened.
  • Serve hot.
