Saudi Chicken Kabsa

Indulge in the authentic flavors of Saudi Arabia with our delightful rendition of Kabsa! A culinary gem, Kabsa holds a special place in every Saudi home, each showcasing a unique twist to this beloved dish.

In celebration of traditional Saudi recipes throughout January, we present our version, enriched with the Gulf’s renowned Daqqous. In the spirit of unity, our recipe seamlessly blends the distinctive Daqqous styles from Saudi, Emirati, Kuwaiti, and Yemeni cuisines. Because, in the end, we are all Arabs, united by our love for exceptional food.

Ingredients:

  • 2 cups Basmati rice (long-grain)
  • 1 chicken, cut into 4 pieces
  • 1 tablespoon ghee + 1 tablespoon vegetable oil
  • 1 finely chopped onion
  • 3 cloves of minced garlic
  • Mixed spices (cumin, black pepper, black lime, bay leaves, cloves)
  • 1 tablespoon tomato sauce
  • 2 tomatoes, chopped
  • 4 hot peppers (optional, according to preference)
  • 2 teaspoons salt
  • 0.5 teaspoon ground coriander

Instructions:

  1. Wash and soak rice in water for 30 minutes.
  2. Wash chicken with white vinegar.
  3. Sauté onion and garlic in ghee and oil.
  4. Add spices, tomato sauce, and chopped tomatoes.
  5. Brown chicken in the pot.
  6. Add 2 liters of water and boil for 30 minutes.
  7. Remove chicken and bake.
  8. Strain broth and cook rice covered for 30 minutes.
  9. Reduce heat when rice boils, add hot peppers.
  10. Top with ghee, serve with chicken with lemon wedges and a side of Daqqous.
