Saleeq is a white-rice dish, cooked in broth. Some people say it resembles Italian risotto.
January this year is all about Saudi Dishes. Coincidentally, the Saudi Culinary Arts Commission announced regional dishes for all 13 provinces of Saudi Arabia, which inspired me to make this heartwarming dish.
Saleeq is incredibly straightforward to prepare, requiring no tedious chopping or grinding. With just two simple steps, you can effortlessly master this dish – first, create a flavorful broth by simmering chicken with aromatic whole spices, and then proceed to cook the rice in the richly infused stock. What’s more, there’s no need to worry about overcooking; Saleeq ensures foolproof perfection every time!

Saudi saleeq
Ingredients
- 330 grams large pieces of chicken
- 10 grams salt
- 2 bay leaves
- 160 grams washed calrose rice
- 600 ml chicken broth
- 20 grams ghee
Instructions
- Add the water, chicken, salt, and bat leaves to a pot and bring to a boil for 20 minutes.
- Remove the chicken and roast in the oven.
- Add the rice to the chicken broth and cook for 30 minutes.
- Before serving, melt the butter and place on top of the dish.
