I wish you all happy times and good health. In 2020, I completed my college journey during the COVID-19 pandemic that affected all of our lives. I couldn’t celebrate that special moment the way I had dreamed, and it deserved.

I couldn’t celebrate that special moment the way I had envisioned. However, through my experience, I discovered that creativity and celebration cannot easily be stopped. I decided to celebrate my graduation in my own unique way.

I decided to mark that significant moment in my life by making a special cake that reflects my personal journey and becomes a part of the lasting memories. I chose to make a Sponge Vanilla Cake, a cake that embodied the simplicity and beauty of the moment. I was able to prepare it with simple love and care, and I enjoyed every moment of the preparation and baking process. The result was irresistibly delicious.

Vanilla sponge cake

Vanilla sponge cake is a classic recipe that is easy to prepare and very delicious. This is due to its light and delicate texture, making it incredibly tasty and suitable for any occasion. The steps are easy, and you will love it a lot.

Ingredients  

  • 4 eggs
  • 1 tsp vanilla
  • ¾ cup of White Granulated Sugar
  • 25 g unsalted butter
  • 25 ml full-fat milk
  • 1 cup all-purpose flour

Instructions

  • Preheat the oven to 250 ℃
  • Beat four eggs with a teaspoon of vanilla extract, then add ¾ of a cup of white sugar.
  • Pour boiling water into a bowl and place the egg and sugar mixture in it, then whisk until it warms.
  • Remove the bowl from the mixture and add 25 grams of unsalted butter and 25 ml of whole milk to another bowl, then place it in the hot water bowl.
  • Pour the egg mixture into the electric mixer and beat until it doubles and becomes fluffy.
  • Sift a cup of white flour twice, then add it to the egg mixture and fold gently.
  • Add a bit of the mixture to the butter and milk bowl, then return it to the main bowl and mix.
  • Pour the mixture into two 15 cm diameter molds and gently tap the molds on the table to remove air.
  • Place in the preheated oven at 250 ℃
  • Bake in the oven for 25 to 30 minutes, or until it turns golden and becomes firm to the touch.
  • Allow it to cool for 10 minutes after baking in the molds, then remove and let it cool completely.
  • For decoration, spread vanilla cream on the surface with food coloring as desired.
