  • 1 cup of oil for frying
  • 1 cup of white onion (julienned (use dried if preferred))
  • 1 tablespoon of sugar
  • 3 tablespoons of tomato paste
  • 3 freshly pureed tomatoes
  • Salt (black pepper, and spices to taste)
  • Cooked pasta (Ditalini and spaghetti mix recommended)

Instructions

  • Cook the pasta: Boil your pasta according to package instructions for al dente texture.
  • Fry the onions: Heat half a cup of oil in a pan and fry the julienned onions until they are golden brown and fragrant.
  • Caramelize the sugar: In the same pan, add 1 tablespoon of sugar to the remaining oil and let it caramelize into a golden brown color.
  • Prepare the sauce: Add the tomato paste, freshly pureed tomatoes, salt, black pepper, and your choice of spices into the caramelized sugar mixture. Let it simmer until thick and flavorful.
  • Add the onions: Stir the fried onions into the sauce.
  • Combine the pasta and sauce: Once the pasta is cooked, toss it in with the caramelized tomato sauce and serve.
